Grandma Kuenzi’s chocolate cream cake!

When Peter was asked by Fox Cities Magazine to share a favorite family recipe for their May issue it was an easy choice for him. Although Peter was only in 5th or 6th grade when his grandmother, Louella Kuenzi passed away, he will always remember her wonderful cooking and how much he enjoyed the family meals with her. One of his most memorable treats? Her simple yet decadent chocolate cream cake frosted with an orange dreamsicle inspired buttercream.
It is true that some of the best culinary creations we make today come from recipes that have been handed down from generation to generation. Peter recalls his father, Norbert, telling him how his mother would take the cream off the milk that was delivered by the milkman and turn it into the sour cream she used in this cake. What could be more delicious! Since sharing the recipe (see below) with the magazine Peter has decided to turn it into cupcakes and offer them in the cafe. Grandma Kuenzi’s Chocolate Cream Cupcakes
1 Cup Sugar
1 1/2 t. Vanilla
1 Cup sour cream
6 T. Cocoa powder
1 t. Baking soda
1 Cup flour
Preheat oven to 350 degrees. Line cupcake tin with liners. Lightly beat egg in a mixing bowl. Add sugar and vanilla. Mix until combined. Add sour cream and mix thoroughly. Scrape down the sides of the bowl and add cocoa powder, baking soda and flour. Mix until just combined. Pour batter into lined pans and bake for 20 to 25 minutes.
*Makes a dozen medium cupcakes or 6 jumbo cupcakes
Orange Creamsicle Frosting
8 Oz. Cream cheese
1/4 Cup sour cream
1/2 t. Vanilla
1 T. Orange zest
1 T. Orange juice
5 Cups powdered sugar
Beat cream cheese until fluffy. Add sour cream and vanilla. Beat until combined. Add zest and juice. Slowly beat in powdered sugar one cup at a time until desired consistency is achieved. Spread on cooled cupcakes.
